Homemade Bruschetta

Homemade bruschetta: a recipe for children of all ages. In this activity children will learn how to combine the yummy flavors of garden tomatoes and fresh basil.

  • Ingredients:
    • 1 1/2 lbs mixed ripe tomatoes (cherry, plum or beefsteak variety work best), chopped and drained
    • 8 basil leaves, thinly chopped
    • 2 cloves garlic, minced
    • 1/2 red onion, chopped (optional)
    • 1 tsp sea salt, or more as desired
    • freshly ground black pepper to taste
    • 1 tbsp olive oil
    • 1 tsp balsamic vinegar
    • French baguette or Italian bread
    • 1/4 cup olive oil
  • Preheat the oven to 450 degrees F.
  • Slice the baguette or Italian bread on the diagonal and brush one side with olive oil. Place this side down on a baking sheet.
  • When the oven has reached 450 degrees, place the baking sheet on the top rack of the oven and bake for 5-6 minutes or until lightly browned.
  • Wash the produce thoroughly.
  • Quarter or half the tomatoes and drain the juices. If you’re using a plum or beefsteak variety of tomato, consider peeling them by blanching the tomatoes for a few seconds in boiling water.
  • In a frying pan, combine the tomatoes, basil, garlic, onion, salt, pepper, and oil and lightly saute, allowing the flavors to blend.
  • Serve this mixture over the warmed, sliced bread and enjoy.
