Latkes: a recipe for children of all ages. Latkes are a traditional recipe for European and Middle Eastern cultures. They can either be eaten sweet or savory with the added toppings included below. Be adventurous and try something new!

  • Inredients: makes about 10 patties
    • 4 medium potatoes, finely shredded
    • 1 egg, slightly beaten
    • 1 onion
    • 3 tbsp cooking oil
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 3 tbsp matzo meal or flour
  • Read the following book:
  • Wash your hands thoroughly.
  • Wash the potatoes and grate them (peel them if desired). Place them in a bowl of cold water while preparing the rest of the ingredients to keep from turning brown.
  • Peel and chop the onion.
  • Beat the egg.
  • Add the onion, salt and pepper, and matzo meal or flour.
  • Drain the potatoes and squeeze the excess water out with your hands.
  • Add the potatoes to the other ingredients and stir well.
  • Press 1/3 cup between palms of your hands to flatten into a patty.
  • Cook in hot oil in a large skillet about 2 minutes, turning once. Use more oil as necessary.
  • Drain on paper towels.
  • Topping options include:
    • cucumber slices, buttermilk dressing, and fresh dill sprigs
    • cherry tomatoes (halved and broiled), pesto, and shaved parmesan
    • goat cheese, pear slices, and honey
    • hard cooked egg wedge, mustard-mayo, and chives
    • mango puree, blueberries, and fresh mint leaves
    • applesauce, sour cream, and chopped green onions, chives or dill weed
