Roots: a recipe for children who are able to use a knife. This recipe is very healthy and a good way to talk about and become more familiar with roots, tubers, and bulbs.

  • Ingredients:
    • 6 potatoes, washed and diced
    • 3 sweet potatoes or yams, peeled and diced
    • 3 beets, peeled and diced
    • 1 onion, peeled and diced
    • 3-4 carrots, washed (or peeled) and diced
    • 1-2 tbsp olive or grapeseed oil
    • garlic salt to taste (or salt and pepper or other desired seasonings)
    • cooking spray
  • Supplies:
  • Preheat oven to 400 degree F.
  • Thoroughly wash all the produce.
  • Coat the 9×13 baking dish or baking dish with cooking spray.
  • Combine all the prepped vegetables in a very large bowl and coat with the oil.
  • Season generously with garlic salt (or salt and pepper and any other desired seasonings) and stir.
  • Place in a 9×13 baking dish and bake at 400 degree F for 45 minutes or until vegetables are tender, stirring occasionally.
  • Serve with a side of cottage cheese or ranch dressing.
