Taco Soup

Taco Soup: a recipe for children of all ages. This recipe is incredibly easy and delicious, perfect for those days when there hasn’t been time to prep dinner. In this activity, children will learn to be thankful for grocery stores on days when life is busy.

  • Supplies:
    • cutting board
    • sharp knife
    • pot with lid
    • wooden spoon
  • Ingredients:
    • 2 Tbsp olive oil or butter
    • 1 large onion, chopped
    • 1 can vegetarian burger, 3/4 cup textured vegetable protein, or 1 lb ground beef (or canned chili)
    • 28 oz can diced tomatoes
    • 1 14 oz can chili beans
    • 14 oz can kidney beans
    • 8 oz can tomato sauce
    • 2 cups frozen corn
    • 1/4 cup or 1 packet taco seasoning
    • 2 cups water
    • colby-jack cheese, sour cream, cilantro, avocado, and chips (Fritos or tortilla) toppings as desired
  • In a large pot, saute the onion, garlic, and burger in olive oil or butter.
  • Open the cans and add the rest of the ingredients in the pot. Do NOT drain the juice from the cans.
  • Stir together and bring to a gentle boil.
  • Allow to simmer for 10-15 minutes and serve topped with sour cream, cheese, avocado, cilantro, and/or chips.
